The Hartmann family is well known for their high quality Maragogype production and this is no exception. The harvest was quite hot this year making this washed Maragogype more delicate and floral then the previous season. Funnily enough the Maragogype plants were a long period experiment to see how a Colombian margogype would perform in Panmanian soil, Alexander who takes care of the farming side of the plants said that they are going to strip down the old plants and sow in new ones in this coming year as they think they’ve realised the potential for farming the variety.His brother Alan Hartmann oversaw the anaerobic processing of this particular lot, which takes place down at the Portola right next to where coffee’s are both dried via raised beds and mechanically. Once the coffee is pulped it’s placed in large plastic barrels with a one way valve and held in shade of the processing facility until deemed complete by Alan.

It’s an extremely interesting take on the maragogype variety and a guaranteed palate pleaser for any coffee enthusiast.
