Los Limones is another stunning coffee we have discovered through our last trip in Panama. It comes by way of the Mi Finquitta project which is run by Ratibor and Tessie Hartmann. The husband and wife team run a consultation program for small time farmers in the region where they help with standardizing farming practices as well as innovating fermentation and drying techniques to get the absolute best out of the coffee. Los Limones is a farm that is closer to the Mi Finquitta project than Mr Steve. It’s located in the Los Pozos region which is notable for other famous farms such as ninety plus, finca Deborah and La palme y El Tucan. To get the best out of this coffee the processing that Ratibor decided to achieve this was to put the whole cherries in bags and macerate them anaerobically for four days. The coffee is then transferred to a dehydrator room where it is dried on raised beds by way of a large condenser dehydrator.
