Ponderosa is a small farm also located in the Santa Clara region in Panama. It’s a new project run by Ratibor and Tessie Hartmann who are looking to push the absolute limit to what the coffee can do with the farm owner Gilberto Cardoze. Originally the farm was purchase to start a dairy farm on, it was Gilberto Cardoze’s son that also suggested to plant coffee and see what was possible on the land. They haven’t skipped a beat either and they’ve recently installed water temp controlled steel tanks for high quality temperature controlled anaerobic processing. This particular lot was processed with two steps of fermentation. Ratibor starts by placing the coffee into an open conical steel tank where he lets the coffee sit until it starts bubbling. The conical shape of the tank macerates the cherries slightly which gives a richer fruit characteristic than the standard washed geisha from Ponderosa. From there the coffee is then moved to a standard outdoor fermentation tank which is more akin to a tiled bath than a modern steel tank. The coffee ferments for 30 hours or so before it can be depulped and sent to the drying stage which is completed entirely on raised shaded African style drying beds. It is similar to the standard washed from the Ponderosa farm, but with more fruit present but the body is still clean and elegant.

This geisha brings in flavours of watermelon, jasmine and raw cacao but at an intensity that will shock you. A coffee not for the feint hearted and only available in limited supply.
