Ponderosa is a small farm also located in the Volcan region of Panama. It’s a new project run by Ratibor and Tessie Hartmann who are looking to push the absolute limit to what the coffee can do with the farm owner Gilberto Cardoze. Originally the farm was purchase to start a dairy farm on, it was Gilberto Cardoze’s son that also suggested to plant coffee and see what was possible on the land. They haven’t skipped a beat either and they’ve recently installed water temp controlled steel tanks for high quality temperature controlled anaerobic processing.This particular lot was processed in the Hartmann’s plastic Anaerobic tanks for 20 days before moved to the drying beds to be finished as a natural. The results are utterly insane. This geisha brings in flavours of watermelon, jasmine and raw cacao but at an intensity that will shock you. A coffee not for the feint hearted and only available in limited supply.
