The team at Granja Paraíso 92 brings deep expertise in roasting, processing, and sensory evaluation. Their family farm uses innovative systems like terracing, drip irrigation, shade management, and precise nutritional control to produce standout coffees. Equipped with a processing plant and microbiology and quality labs, they create highly consistent and unique profiles across washed, natural, honey, and anaerobic processes.
Process
Cherries undergo a 90°C thermal shock for 120 seconds, then ferment anaerobically with added Saccharomyces pastorianus yeast for 96 hours, followed by drying at 38°C.
Variety
Sudan Rume is a rare hybrid from the Boma Plateau in Sudan. Low-yielding but prized for exceptional quality.
