This year, the Edelweiss team decided to implement a focus on greater repeatability of all their coffees. After having great success with anaerobics as well as fully washed coffees, they were pushed to see what more they could do in terms of coffee processing. This year, they invited a friend from Chile, Marcelo Pereira, to join the team and lead the processing methods. 64 trials were run on the initial pick on various varietals where each one was tested with a pre-fermentation then finished as either a washed or natural.
After the trials, they found the SL28 to be a very versatile coffee taking on well to many different treatments. In this lot, the coffee was pre-fermentedfor 3 days and then dried as a natural.
Expect notes of raspberry pie, frutella, and vanilla!
